Substrate comprises an antimicrobial coating comprising at least one Maillard product, preferably melanoidin. Independent claims are also included for: (1) an antimicrobial packaging material comprising at least one Maillard product, preferably melanoidin; (2) producing the substrate with antimicrobial coating, comprising (a) providing a substrate, (b) providing a mixture containing at least one Maillard product, for coating the substrate, (c) applying the mixture on the surface of the substrate, and (d) curing the mixture to form a Maillard product containing coating; and (3) producing the antimicrobial packaging material, comprising (i) providing a mixture for producing a molded body or a film, (ii) adding at least one Maillard product containing component to the mixture, and (iii) carrying out machine molding of the film or the molded body made of the Maillard product containing material.
